Laffin's simple Crock Pot chicken soup recipe (v1.0)
Here's a simple chicken soup recipe I threw together from scratch the other night, it's a good easy recipe that makes lots of leftovers, so it's great for a busy weekday/night.
WHAT YOU WILL NEED:
4 chicken thighs/One package of soup cuts
2 Large carrots (more can be added if desired)
2-4 Stalks of celery (more or less, if desired)
1 Lime (or, you may substitute 1 to 2 tablespoons of lime juice)
2 cups water
One large carton of organic free-range Chicken broth
One small carton of organic free-range Chicken stock
Salt (I prefer sea salt)
Black pepper
Garlic powder
About 1-2 tablespoons of Dried onion flakes
Parsely (Dried or fresh)
Cutting board (For poultry)
Cutting board (For vegetables)
Santoku knife
Slicer knife (optional)
Fillet/Boning knife (optional)
Vegetable Peeler (optional)
Crock Pot (or similar style of slow-cooker)
PREPERATION:
Take your frozen or thawed chicken, remove from any kind of packaging it may be in, and separate. If desired, remove any skin from the meat with a common kitchen slicer. Additionally, if desired use a Fillet knife or Boning knife to de-bone the chicken, however, this step is not necessary, as the meat will separate from the bones via cooking later. When this is done, place the chicken in the bottom of your Crock Pot slow cooker. Then, on a clean cutting board (to prevent cross-contamination of foods, either use separate cutting boards, or wash between ingredients) place the carrots. If desired, use a vegetable peeler to shave off the outer skin of the carrots, though this is not necessary, provided they are properly rinsed first. Using a santoku knife, remove the very tips and very tops from the carrots and discard, then cut the rest of the carrots into coins and dump on top of the chicken in the crock pot. Rinse off your santoku knife and cutting board, and then give the celery stalks a quick rinse, making sure no dirt is on the stalks. Again, remove and discard the leafy tips and roots from the stalks, and discard. Cut the celery stalks into bite-sized pieces (no longer than an inch each) and dump on top of the carrots in the crock pot. Again, rinse your knife and cutting board. Add one large carton of organic free-range chicken broth, one small carton of organic free-range chicken stock, and two cups of water. Season with 3-12 dashes of Salt, Pepper, and Garlic powder, as well as at least a tablespoon worth of dried onion flakes. Add enough of either dried or fresh parsley to give a nice garnish (as a rule of thumb, I would suggest adding at least as much parsley as you've added onion, if not just a little bit more). Place lid on the Crock Pot and plug in, allowing it to cook on high all day (or at least 6 hours- this recipe is best prepared early in the morning so it can cook through your work day, allowing you a fine dinner ready and waiting when you return home). Before serving, squeeze at least 1/4 of a lime (or lime juice) into the soup. Stir well and serve with wide egg noodles or rotini pasta.
Might as well post up the most recent thing I cooked. For me, this one factors in as a money-saver. But I despise bland food, so I needed something that was filling, relatively healthy, and cheap. Below is my answer to that.
Crockpot Lentil CurryServings: 10
Ingredients:1 Large yellow onion
2 Cloves of garlic*
2 Cup brown or yellow lentils
2 Large potatoes (Alternatively, I imagine a sweet potato would also work for this)
2 Carrots
4-5 Tbsp curry powder
500g Diced tomato (15oz tin would work)
500g Tomato sauce (15oz, also known as passata)
3 Cup vegetable stock (could substitute for chicken)
400g Coconut milk (14oz tin)**
Salt to taste
Optional:
3 Tbsp chilli powder***
Method:
- Peel the carrots and slice. Wash and cube potatoes into 2cm (~1in) cubes. Dice the onion.
- Add onion, garlic, potato, carrot, diced tomato, tomato sauce, stock, lentils and curry powder to crock pot. If using chilli, add it now. Stir all ingredients together to mix.
- Cook on high for 3 hours 30 minutes.
- Stir coconut milk through and cook for a further 30 minutes. Season with salt to taste.
- Dish is ready to serve immediately, or can be frozen for up to 6 months.
Best served over basmati or white long grain rice. Add diced red onion to garnish.
*If using pre-minced garlic from a jar, 1 Tsp = 1 clove of garlic.
**Heavy cream can be used as a substitute for coconut milk in a ratio of 1:1.
***If using a hotter variant of curry powder, chilli powder may not be necessary at all.
